"...to preserve their freshness and integrity, the olives are harvested early and pressed on the same day. The 2024 vintage was particularly demanding for the cultivation of the olive tree as the cold and rainy spring delayed the flowering which was then heavily penalized by the sweltering June. September and October sunny and cool nights allowed the olives to ripen correctly, later than average, but with an excellent supply of polyphenols, aromas and fatty acids"

Olive groves: located in the municipalities of San Gimignano and Certaldo.
Layer and texture of the soil: hilly at 200/300 m above sea level, medium-textured soil of Pliocene origin
Processing: in trusted certified organic crushers. Washing and sorting of the olives, hammer pressing, weaving in closed tanks at low temperature, continuous separation.
Storage: in stainless steel tanks saturated with nitrogen in thermo-conditioned environments.

Pairings and Preservation

An irreplaceable food in the Mediterranean diet for its healthy qualities due to the richness of antioxidant polyphenols, vitamin E and unsaturated fatty acids. Given its natural concentration, it is recommended to use it in small raw doses to flavour the most varied dishes.
Preservation notes: at room temperature protected from sunlight.

THE LABEL

The label’s dark background centers around a large oil green rectangle, which serves as the frame for the prominently displayed law text. This choice of color and shape creates a strong visual foundation that draws attention while evoking a sense of tradition and solidity.

At the top of the label, the historical company logo is proudly featured. It depicts a parchment scroll, on which the company name is elegantly engraved alongside the motto "in humo virtus," meaning "virtue in the soil." This emblem reflects the deep roots and enduring values that guide the winery’s philosophy.

Towards the bottom of the label, three of the nine company symbols are arranged to symbolize the cultivation of the olive tree, a vital element of the estate’s heritage. The shell represents the marine origins of the land, a reminder of the unique terroir that influences the character of the produce.

Alongside the shell, water is depicted, emphasizing its essential yet sparing role in nurturing the olive trees. Finally, the symbol of the wind highlights its life-giving presence during the critical pollination period of the olive flowers, connecting natural forces to the cycle of growth and harvest.
